SEEDED HONEY
Seeded Honey? Yes, that’s what I said. Seeded honey has been enjoyed for centuries in European nations. Here in the US, not so much, until now, it’s getting attention; googled, you can even purchase jars of it. I’s say it adds a new dimension to the already delicious flavor of100% honey. I tried a five seed recipe, adding black/white sesame seeds, flax, poppy and chia seeds to honey. Too many seeds, I felt. Other seeds suggested, caraway, pumpkin, fennel, sunflower and more. Sometimes they are toasted just a bit or just thrown in as they are. I did this as well, some yes, some no. I prefer to use two to three seed varieties.
Also suggested: chopped pecans, almonds, macadamia nuts, and more. Spices: crushed cardamon, cinnamon, coriander, and fenugreek spices.
A Tablespoon of mixed seeds per 1/4th cup of honey has been suggested; do an experiment to get your favorite. Seeds and honey tend to separate so you must mix again before using. Some can sit at the counter for two to five days. I mix up only what I think I will need at a time, or enough for a day or two. One of our favorite blends is lightly toasted sunflower seeds, a few sesame seeds, and poppy seeds with a bit of sea salt to taste and a touch of sea salt to taste.
Serving seeded honey ideas:
My Favorite – on top of a good sharp white cheese settled on a cracker, baguette, etc. However, spread over cream cheese is good as well. But the sharp cheese is the best!
Yogurt
Charcuterie board with cheeses, grapes, toasted crackers, seeded honey balances out the strong cheese. Honey balances out the cheese.
Roasted carrots,
Oatmeal or other cooked cereal – steel cut oats, cream of wheat, grits, etc.
Peanut butter and seeded honey on good bread – a slice of crisp bacon adds something else!
On top of eggs benedict, Great in those dressings, sauces, etc. On biscuits, crescent rolls, waffles, pancakes, toast
Pasta Salads, etc. Cottage cheese,

I tried the Honey Banana Bread from honey.com and guess what? They used all honey for the sweetener – no other sugar, it’s Fred’s favorite with the honeyed whipped cream
1/2 cup – honey
1/3 cup – margarine – I used one that is for baking.
1 tsp. – vanilla – Dixie note: I use 1&1/4th tsp.
2 – eggs
3/4 cups – whole wheat flour
1/2 cup – unbleached flour
1/2 cup – rolled oats.
1 tsp. – baking powder
1 tsp. – nutmeg Dixie note: I prefer 1/2 tsp nutmeg and 1/2 tsp cinnamon.
1/2 tsp. – salt
1 cup – ripe banana, mashed.
1/2 cup – walnuts, chopped – I toasted the walnuts for a bit.
DIRECTIONS
Cream honey and margarine in large mixing bowl until fluffy. Beat in vanilla. Add eggs one at a time, beating well after each addition.
Combine dry ingredients. Add alternately with bananas, blending well. Stir in walnuts.
Spoon into greased 9x5x3-inch loaf pan.
Bake at 325°F 50 to 55 minutes or until wooden pick inserted near center of loaf comes out clean. Cool completely before slicing.
Hint: I oil the cup I measure honey in so it will come out easily and not stick to cup. I also do this is using spoons, etc. with honey.
Another idea: Serve with honeyed butter? Softened butter a bit, slowly beat honey into butter until you reach the desired thickness. I like to make it fluffy, and you only need a little to give great flavor. OR: TRY THE WHIPPED CREAM BELOW – YUM1
It came to me, why not whipped cream sweetened with honey – got the idea, tried it, husband wanted a bowl – turns whipped cream into a gourmet treat on top of the banana bread for a dessert! Great idea for other desserts calling for whipped cream.” Just got another idea – adding mead!
Beat cold heavy whipped cream with electric beater to the almost peak stage, add streams of honey – start out with a little, whip cream more, add a little vanilla, more honey and whip to peak stage. This will hold up for days in the frig, if it lasts that long. I have done this idea, which seems like it wouldn’t work, but does it ever. I have even whipped cream with a little Merlot, peach preserves, etc. It’s a winner!
I make this salad every spring and summer- so refreshing! I add cucumbers, sliced green onions and sprinkle sliced almonds on top! Add protein like grilled chicken for a whole meal.
Pasta may be substituted. I like strawberries in this!
1 cup – quinoa, rinsed in a fine-mesh strainer for 3 to 5 minutes.
2 cups – water
1 1/2 cups – fruit, chopped (e.g., mangoes, strawberries, raspberries, peaches)
1/3 cup – mint leaves, shopped – optional.
For Honey Lime Dressing: So simple!
1 – lime
2 T – honey
1/4 tsp. – salt
1/4 cup – mint leaves, (optional, for garnish)
DIRECTIONS
Heat medium saucepan over medium heat and toast quinoa for 1 minute. Add water and bring to a boil. Lower heat, cover and cook for 15 minutes. Remove saucepan from burner and allow to sit for 4 minutes.
If chilled salad is desired, transfer quinoa to medium serving bowl and chill in refrigerator for 30 minutes.
Meanwhile, whisk together lime juice, honey, and salt. Mix fruit, dressing and chopped mint into quinoa. Garnish with additional mint and serve.
